Kuyruk yağı
Tail fat from a fat-tailed sheep, threaded between pieces of meat on a skewer to baste them as they grill.
The sign of a traditional ocakbaşı. It is the fat that makes hand-minced Adana kebab juicy and is grilled in cubes alongside shish.
