Şalgam

A sour, salty fermented drink of purple carrot and turnip from Adana, drunk with spicy kebab.
Deep red, cloudy, and sharp like pickle brine, şalgam is served cold with a stick of pickled carrot in the glass. The 'acılı' version has chilli. It pairs with Adana kebab, tantuni and çiğ köfte and is considered a hangover cure.
