What a Turkish takeaway does well
Grilled meat travels better than most food: shish, adana and köfte arrive hot and the bread underneath has caught the juices. Lahmacun and pide are baked to order and are good for twenty minutes. Doner is the fastest and the most variable. Rice and bulgur keep; salads and yoghurt should go in separate boxes, and a good takeaway does that without being asked. What does not travel is anything fried, so skip sigara böreği and fried calamari on a delivery order.
Ordering direct versus the apps
Almost every Turkish takeaway in our directory is on at least one delivery app, and the app price is usually higher than the counter price because the platforms take a large commission. If the shop is within walking distance, phone the order in and collect; you will pay less, the food will be fresher, and the owner keeps the margin. Most have their own menu online or on the door.

The hygiene rating on our listing is the Food Standards Agency's score for that premises. A 5 is the norm among the better Turkish takeaways; treat a 3 or lower as a reason to choose the next one on the list. A takeaway that also has a sit-down room is generally cooking to a higher standard, because the food is being watched. Look for a charcoal grill and a house-made doner spit.

Pide is a boat-shaped flatbread with a soft, chewy base, filled with cheese, spiced minced meat, sucuk, spinach or egg and baked in a stone oven. It is often called Turkish pizza in the UK, but it is closer to a filled bread: thicker than lahmacun, longer than a pizza, and eaten sliced into strips with a squeeze of lemon. A pide salonu, a restaurant built around the pide oven, is one of the most reliable places to eat cheaply and well.

Çöp şiş is lamb cut into very small pieces, threaded on thin wooden or metal skewers and grilled fast over charcoal. The name means 'rubbish skewer', because it was made from the trimmings left over from cutting bigger kebabs, but it is now a dish in its own right and one of the best things on a Turkish grill: small, crisp-edged, intensely flavoured and eaten in wraps or off the stick.
